This week was the beginning of lock-downs, isolation and working from home in Aus. With this comes uncertainty, fear and feelings of doubt and loss. Putting many of us into a highly-stressed state. My tips to manage this stress are: Have purpose. Without a goal, we have no direction. This contributes to feelings of loss, doubt, confusion... use each day to grow, learn and progress; if we have clear goals to focus on, we will foster more positive emotions of fulfilment and pride. Start with the BIG PICTURE. Who do you want to be in 6 months? What do you want to achieve? Break this down into monthly, weekly and daily goals. Each evening write down to-do lists for the following day. Having a clear schedule will keep us busy and on track; rather than focusing on the uncertainty of our current world, we can succeed in what we want to achieve. These positive emotions will mitigate anxiety and stress caused by the unknown. Establish & maintain habits: our habits shape who we become. Our daily actions lead to future success. Consistent habits, provide structure. Develop lifestyle routines (sleep rituals, water intake, goal setting), nutrition (meal prep, food tracking, water intake, supplements), training (home-workouts, steps, cardio, mobility and stretching). Turn weaknesses into strengths: Take note of your weaknesses and come up with a plan to work on these every day. With consistency, the weaknesses you focus on will become strengths. Become educated in areas that benefit you. Use this time to LEARN! Aim to learn one new thing daily. Dedicate time to growth, progression and focus on YOU. Connect: We are experiencing lock-downs, isolations and containment – it doesn’t mean we can not connect with others. And this is so important for overall health. Keep communication up with phone calls, video chats and social distancing catch ups. — Starting my Sunday with my usual ritual. Coffee, weekly reflections and setting next weeks goals. Por aquí dejo la cena de hoy...empanada fit con masa de semillas y cereales y rellena de atún, espinacas y champiñones 😋 . . ▪️En una sartén con un poco de aove, ponemos un poco de cebolla 🧅 y un diente de ajo 🧄 picaditos y unos champiñones 🍄 laminados. Cuando suelten todo el agua y estén hechos, añadimos un buen puñado de hojas de espinaca 🍃y removemos todo junto un ratito, luego añadimos un chorro de leche de almendras sin azúcares añadidos🥛 y un poco de queso 🧀 rallado y cuando se absorba, retiramos del fuego y reservamos. ▪️Por otro lado, extendemos la masa de semillas y cereales con un rodillo y untamos la mitad con queso de untar light, luego colocamos encima la mezcla que reservamos antes y añadimos también 3 latas de atún. ▪️Cerramos la empanada doblándola por la mitad y ayudándonos de un tenedor y metemos en el horno previamente calentado a 180 grados durante unos 15 minutos. You cannnnnnot wrong with this one-pan, Maple Dijon Salmon with Roasted Zucchini 🙌🏽 Literally took 5 minutes to prepare and the oven does the rest of the work. Simple and healthy make the best combo. . * 2 salmon fillets * 2 zucchini - washed and cubed * 1 tbsp maple syrup * 1 tbsp Dijon mustard * 1 tsp parsley * 1 tsp thyme * 1 tsp basil * Olive oil * Dash of salt n pepper . * preheat the oven to 400 * Prepare the glaze by adding all of the ingredients besides oil, salmon, and zucchini in a bowl and whisk * In a cast iron skillet (or oven safe dish) drizzle olive oil and place in the salmon * Pour glaze over salmon and spread out evenly * Next place in cubes zucchini and sprinkle the same seasonings (minus the mustard and maple syrup over the zucchini and mix sround) * Place skillet in oven and cook for about 20 mins, remove salmon from skillet and continue cooking zucchini for 10 mins. 🥗 Healthy Eating 🥗⁣ ⁣ Impulse eating and over eating are things I’ve struggled with my whole life. I’ve dieted off and on since 6th grade. I weighed more in 5th grade than I did when I got married. Overeating is a unique struggle because you can’t hide it. Everyone has struggles, but most struggles can be hidden from others, unless you choose to tell someone what you’re dealing with. I think overweight people are often judged and looked down on. People are quick to judge by what they see, but our site doesn’t tell us the whole story! It’s important to never judge by what we “see”. Always be open and get the whole story. You never know what someone has been through or what efforts they’ve gone to working towards turning their struggles in to victories. We need to be a strength, support and encouragement to people wherever they’re at. We all need it in some area. No one is struggle free! So next time you have that word or thought of judgment towards someone remember your own struggles and turn it around with encouragement or a positive thought towards that person. ⁣ ⁣ How have you or how can you be a support to someone struggling with something you don’t struggle with?

it’s so rainy out today in PA so to brighten up the day I decided to bake cookies 🙌🏻 I made at least 12 batches of dairy free cookies as well as regular cookies for my boyfriend 💝 cookies are done and the apartment is smelling fabulous, next up is dairy free muffins and regular muffins 🙌🏻 today’s baking #dEATS 👉🏻 Lily’s dark chocolate chip dairy free cookies 2 1/4 cups @bobsredmill almond flour 1 teaspoon baking soda 1 teaspoon salt 1 cup plant butter (no milk) 3/4 cup granulated sugar 3/4 cup packed brown sugar 1 teaspoon vanilla extract 2 large eggs 1 cup @lilys_sweets dark chocolate Directions: Preheat oven to 375 degrees and line cooking sheet with parchment paper. In a bowl, add flour, baking soda and salt. Mix together. In a separate bowl add plant butter, brown sugar, vanilla, and granulated sugar until creamy. Add one egg and mix then add the next egg and mix. Slowly add the flour mixture. Beat until all flour is fully mixed. Stir in @lilys_sweets dark chocolate chips. Roll cookies into about 1 tbsp size balls. Be sure to flatten them slightly before placing them in the oven. Let the cook for 10-13 minutes until preferred golden brown texture is achieved. Take out and place on a wire rack to cool for 2-3 minutes.
