This morning my coworker and I were chatting about foods from our childhood that you can't find anymore, Keebler's Magic Middle cookies were one of them, so I made my own...but a peanut butter version, using candy I had on hand.
Peanut Butter Cookies, with a hidden chocolate center!
Not the prettiest dessert I've ever made, but it was quick and easy! Super duper easy! Inside these peanut butter cookies is a Hershey's milk chocolate egg, the kind wrapped in foil that you buy at Easter, but something similar would work too. 1. Unwrap the chocolate eggs, put them in the freezer. 2. About 45/60 minutes later, prepare your favorite peanut butter cookie dough. 3. Form the dough into balls, put a piece of (frozen) chocolate inside, put them on you cookie sheet. Don't do the crisscross flattening thing with a fork. 4. Bake according to the recipe of that favorite peanut butter cookie recipe. 5. Let them cool a tiny bit (so you don't burn your mouth!), then enjoy!
